Stuffed Meatloaf Roll

From a Facebook message, again that has a non-functioning link. Drat. 

2 pounds lean ground beef
1 cup dry bread crumbs
2 eggs beaten
1 chopped onion
1 chopped bell pepper
1 cup chopped mushrooms
1 cup chopped black olives
3/4 teaspoon salt
1 teaspoon leaf oregano
1 8 oz can tomato sauce
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
2 cans crescent rolls

In large bowl, combine beef, crumbs, egg, onion, salt and oregano. Stir in 1/2 tomato sauce; set aside. Cut 2 pieces of waxed paper 15 inches long. Unroll crescent roll dough and don't separate. Lay end to end on top of wax paper and place second piece of wax paper on top. Now take rolling pin and roll the dough out till it's half the thickness that it was originally .Place meat mixture in center and spread out over dough Sprinkle meat with cheese,bell pepper mushrooms and olives top with remaining tomato sauce. Roll up meat, jelly-roll fashion, starting at narrow end; use wax paper to help. Place seam side down . Place in non-stick 9-1/4-in. x 5-1/2 in. x 2-3/4-in. bread pan. Bake at 375 degrees F for 30 minutes. Drain off any fat that accumulates; return to oven for 30 minutes. Can also be done
with pizza dough for a thicker crust.
I also experimented with saran wrap instead of wax paper
and that seemed to work pretty good DO NOT LEAVE THE PLASTIC WRAP ON OR THE WAX PAPER !!

Crock pot meatloaf & bakers

Make your meatloaf however you typically make it.  Below is the recipe from this blog. I'm sure mine is on my blog somewhere ...... 
2.5 pounds of ground turkey (or beef, if you prefer)
1 egg
3/4  cup smashed cornflakes (or bread crumbs, but I prefer corn flakes)
1 envelope of Lipton onion soup mix
2-3 Tbsp Worcestershire sauce
salt, pepper, paprika, garlic salt, Italian seasoning to taste.
Mix the ingredients well and form a “loaf” in the bottom of your crock pot.
Then, wash 5-6 small-medium potatoes, prick them with a knife or fork, and wrap them in foil.  Place them around the meatloaf.  Cook for 8-10 hours on low.  You do not need to add water, and wrapping the potatoes is optional (I just like them to have their own flavor at the end of the day).

Crock pot creamy tortellini

THE BEST Crockpot meal: 1 bag of frozen tortellini - 1 small bag of fresh spinach - 2 cans of italian style diced tomatoes - 1 box or 4 cups or vegetable broth - 1 block of cream cheese - put all ingredients in crockpot, chunking up the cream cheese. Cook on low for 5-6 hrs. SCRUMPTIOUS!

Crock Pot BBQ Ribs

Like so many crock pot creations, these look horrid ..... But they also transform into the most delicious, melt-in-your-mouth wonderful winter meal!



4 pounds Ribs of your choice
2 teaspoons Worcestershire sauce
1 teaspoons vinegar
salt and pepper to taste
1 bottle of sweet baby rays BBQ
2 tablespoons brown sugar
1 teaspoons oregano

Directions:
In a bowl, mix together all the ingredients except for the ribs themselves.

Place ribs in slow cooker. Pour sauce over ribs, and turn to coat.
Cover, and cook on Low 6 to 8 hours, or until ribs are tender.

Cream Cheese Sugar Cookie Bars

  • Cookie:
  • 1½ cups sugar
  • 1 cup butter, softened
  • 8 oz cream cheese, softened (I used light)
  • 1 egg
  • ½ tsp almond extract
  • 1 tsp vanilla
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 2½ cup flour
  • Frosting:
  • ½ C butter softened
  • 4 oz cream cheese, softened
  • 3½ C powdered sugar
  • 1 tsp vanilla
  • 1-3 Tbsp milk
  • food coloring, if desired

Instructions
  1. In a large mixing bowl or stand mixer combine the butter, cream cheese, sugar, and egg blend with a mixer until nice and smooth. It will almost resemble frosting.
  2. Add the vanilla and almond extract and beat for 1 minute more.
  3. Add the flour, baking powder and baking soda. Beat for about 2 minutes.
  4. Spread or press the dough evenly into a jelly roll (13 x 18) pan. I found it easiest to spread it with an offset spatula.
  5. Bake at 350 degrees for 20 minutes or until golden brown. Test with a toothpick for doneness.
  6. Let the pan cool completely.
  7. For the frosting, in a large bowl (or your stand mixer) beat the butter and cream cheese until smooth.
  8. Add the powdered sugar, milk, vanilla and food coloring, if desired. Beat for about 4 minutes until noce and fluffy.
  9. Frost cooled pan of cookies. Cut the cookies into bars and serve! Makes 40 bars.

Olive Garden Alfredo Sauce

1 pkg Pasta (penne or fettuccine)
1 stick of butter
1 clove of minced garlic
1 pint of heavy cream
1 cup of fresh Parmesan cheese
2 tbsp cream cheese
1/4 tsp salt
1/2 tsp white pepper



Make Pasta to your liking.
In a sauce pan over medium heat – melt butter and add garlic and cook for two minutes, then add in heavy cream and cream cheese and heat until bubbling, but do not boil.
Add in Parmesan Cheese and mix until the cheese melts.
Sprinkle in salt and pepper to taste (you don't need to use all of this, do to your liking).
Mix the hot sauce into the noodles and serve. Just like Olive Garden. {copy cat}

Lunch lady scratch brownies

A LUNCHROOM LADY'S 50 YEAR OLD RECIPE!

1 c butter
1/2 c cocoa
2 c flour
2 c sugar
4 eggs
4 tsp vanilla
1 c chopped nuts.
Pour in 9x13 pan, bake 20-25 mins on 350. Check at 20 minutes.

**Icing*
1/4 c softened butter
¼ c can milk (regular milk is fine)
1/4 c cocoa
3 c powdered sugar
dash salt
Mix all together & frost as desired.

Australian Hot Crash Potatoes

This was another Facebook recipe. Facebook was right .... They we're delish!! These were the most delicious potatoes I've ever had, I swear! In Australia they are called Crash Hot Potatoes, I don't know why .... whatever the name, they were SO awesome! And super simple, just boil some baby potatoes (I used red) until fork tender. Preheat oven to 450 degrees. Drizzle olive oil on a baking sheet, set potatoes on sheet and using a potato masher, gently smash each potato down, rotating masher both ways (so it looks like a thick cookie). Drizzle with olive oil, season with salt/pepper and sprinkle cut fresh herbs and garlic over each. THEN top with some lovely grated Parmesan cheese. Bake for 20 minutes. OMG...crispy on the outside, soft in the middle, salty, garlicky, herby and cheesy goodness.

Outback Steakhouse Alice springs chicken

Stolen from someone on Facebook, who sent it to me in a message and now I can't give credit because the link in the message doesn't work. Sorry. 

4 boneless skinless chicken breasts, pounded to 1/2 inch thicknes
Seasoning Salt
6 bacon slices
1/4 cup regular mustard
1/3 cup honey
2 Tbsp. Mayonnaise
2 teaspoons dried onion flakes
1 cup sliced fresh mushroom

2 cup shredded Colby/Jack cheese
First, Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes.

While the chicken is in the refrigerator, cook bacon in a large skillet until crisp. Remove bacon and set aside. ***Do not discard grease.***
Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned. Place chicken in a 9" × 13" casserole dish or pan.
To make the Honey Mustard: In a small bowl, mix the mustard, honey, mayonnaise and dried onion flakes.
Spread some of the Honey Mustard over each piece of chicken, then layer with mushrooms, crumbled bacon, and shredded cheese.
Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done.
Serve with the left over Honey Mustard Sauce that you made.
3 cups of cooked white rice 
3  tbs sesame oil
1 cup of frozen peas and carrots 
1 small onion, chopped 
1 tsp minced garlic 
2 eggs, slightly beaten
¼ cup soy sauce 

On medium high heat, heat the oil in a large skillet or wok. Add the peas carrots mix, onion and garlic. Stir fry until tender. Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and stir fry until scrambled. Now add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated. Try adding some green onion.  Add protein for a complete meal :) 

Cream cheese berry breakfast from Facebook thing

2 pkg crescent rolls or the ones with no seams
8 oz cream cheese
2 tbsp brown sugar
1tsp vanilla
½ cup fruity preserves --- or not -- I just used fresh fruit
Strawberries, blueberries, lemon, whatever other berries
Powdered sugar
Egg

Mix cream cheese and brown sugar. Spread inside the laid out rolls. Add preserves and fresh fruit. Pull the edges together over the top.  375 for 20 minutes. Make frosting from lemon and conf. Sugar. Drizzle over the top of warm creation.

Puffed Pastry Pizzas

Delicious alternative that is lighter than true pizza crust. Use whatever toppings you like :) don't forget to add time to thaw the crusts ..... Bake your creation at 400-425-ish for about 15 minutes.
