How many times do I hear myself say, "where is that big orange binder?" or "has anyone seen that big orange binder?" The big orange binder has been accumulating recipes, kinspiration & original recipe cards tucked into plastic sleeves for my entire-almost-forty year existence. Parmesan Green Beans

Serves 4.

Coarse salt and ground pepper
1 lb. fresh green beans, washed & ends removed
2 tablespoons butter
1 tablespoon fresh lemon juice
2 tablespoons finely grated Parmesan cheese

Bring a large saucepan of salted water to a boil. Add green beans, and cook until tender, 5-8 minutes. Drain and return to pot.  Add butter, lemon juice, and 1 tablespoon Parmesan. Season with salt and pepper, and toss to combine. Serve sprinkled with remaining Parmesan.
