How many times do I hear myself say, "where is that big orange binder?" or "has anyone seen that big orange binder?" The big orange binder has been accumulating recipes, kinspiration & original recipe cards tucked into plastic sleeves for my entire-almost-forty year existence. "The Big Orange Binder" is an organization attempt. It's a recipe with a story neatly packaged in a place where I'll always be able to find the ever-elusive . . . Big Orange Binder.

Cheesy Soft Scratch Pretzels

Fresh from the oven, these are the perfect snack.  On snow days, the kids have a great time helping make them . . . .  

1 ½ cups all purpose flour
½ cups shredded cheese, cheddar
2 tsp baking powder
1 tsp sugar
¾ tsp salt
2 tbsp cold butter or margarine
2/3 cup milk
1 egg, beaten
Coarse salt


In a bowl, combine flour, cheese, baking powder, sugar & salt.  Cut in butter until crumbly.  Stir in milk until just moistened.  Knead on a floured surface for 1 minute, divide in half.  Roll each portion into a 12 inch x 8 inch rectangle; cut into 8 inch long strips.  Fold strips in half, pinching the edges and twist into pretzel shapes.  Place on greased baking sheet.  Brush with egg and sprinkle coarse salt.  Bake at 400 for 12-15 minutes or until golden brown.  Serve immediately.  Makes 1 ½ dozen.
