DRESSING: 1/2 c. chopped cilantro leaves (I used celery leaves 'cause I hate cilantro)
1/4 c. extra-virgin olive oil (use a really good one for this)
2 T. freshly-squeezed lime juice
2-3 dashes (or more) Tabasco sauce
SALAD: *4 c. chopped romaine lettuce
*2 avocados, peeled and diced
*1 c. chopped cherry tomatoes
2 c. fresh, frozen or canned and drained corn kernels
2 15-oz. cans black beans, rinsed and drained
3/4 c. grated pepper jack cheese
kosher salt and freshly-ground black pepper to taste
* add at last minute
DIRECTIONS: In a small bowl or cruet, whisk together dressing ingredients; set aside.
In a large serving bowl, mix other ingredients and add dressing; mix well.
Season with salt and pepper; serve and enjoy !!
