How many times do I hear myself say, "where is that big orange binder?" or "has anyone seen that big orange binder?" The big orange binder has been accumulating recipes, kinspiration & original recipe cards tucked into plastic sleeves for my entire-almost-forty year existence. "The Big Orange Binder" is an organization attempt. It's a recipe with a story neatly packaged in a place where I'll always be able to find the ever-elusive . . . Big Orange Binder.

Experiment 1:

a little of this and a dab of that scratch brownies -- this may need tweaking - i'll update later

1/2 cup butter, cocoa powder & flour
1/4 tsp salt
a big splash of vanilla extract
2 eggs
1 cup sugar

350 for 2o minutes

Chicken Broccoli Divan

Easy . . . . from one of those Campbell's recipe cards my mom used to have in a rusty box . . . .

8 cups fresh or frozen broccoli
8 skinless, boneless chicken breast halves
1 can (26 oz) Cream of Chicken Soup
1 1/4 cup milk
1 cup shredded Cheddar cheese
1/4 cup dry bread crumbs
2 tbsp melted butter

1.  Arrange the broccoli and chicken in a shallow baking dish.
2.  Stir soup and milk together.  Pour over broccoli and chicken.
3.  Sprinkle cheese over the top.
4.  Mix bread crumbs and butter together and then sprinkle that over the whole thing.
5.  Bake at 350 for 45 minutes or until the chicken is cooked through.

Champagne Cupcakes

Stolen from the pages of People Magazine, December 17, 2012 edition.  It's Katherine Berman & Sophie LaMontagne's recipe, sibling owners of Georgetown Cupcakes.    I just thought the picture looked lovely and it looks like a moist cupcake sans frosting that would be a fun baking project for the kiddos . . . . .

1/2 cup unsalted butter
1 3/4 cup sugar
2 eggs
1 1/4 cups milk
2 1/4 tsp vanilla extract
2 1/2 cups sifted all purpose flour
2 1/2 tsp baking powder
1/4 tsp salt
1/2 cup champagne

bake @ 350 for 19-21 minutes.  Garnish with cut strawberry wedges and powdered sugar.  They really look delish!
